Thaumatin
Thaumatin is a natural sweet-tasting protein originally extracted from the fruit of Thaumatococcus daniellii. It is widely used in research and food applications as a high-potency sweetener and flavor modifier.
- Molecular Formula: C19H29N3O3S
- Molecular Weight: 379.519 g/mol
Ideal for research in food science, sweetener studies, and flavor enhancement applications.
Description
Thaumatin is a naturally occurring sweet protein, derived from the West African plant Thaumatococcus daniellii. Known for its intense sweetness—up to 2,000–3,000 times sweeter than sucrose by weight—Thaumatin is used in research, flavor modulation, and as a high-potency sweetener in food applications. Recombinant forms of Thaumatin B are also available for consistent quality and scalability.
