Mustard Oil
An ethereal, hot mustard-coloured oil derived from the seed, with uses ranging from relieving pain and stimulating blood circulation to these culinary purposes with conditions applied.
Description
Overview
As the name suggests, mustard oil is an oil obtained from mustard seeds of two varieties, namely Black mustard seeds (Brassica juncea) or Brown Indian mustard seeds (Brassica nigra). It has a very sharp pungent smell and a sharp, spicy taste. This oil has been employed in various cultures for food preparation and its preservative health benefits. Cold-developed or mechanically expelled, the oil concentrates the volatile contents within the seeds to create a strong mustard oil with a distinct taste.Chemical Composition
The typical sharp smell and hot taste in mustard oil are primarily due to a substance named allyl isothiocyanate (AITC). While AITC contributes to the pungent taste, it also has positive health attributes. Other nutritional components of the oil include linoleic acid and oleic acid.Uses of Mustard Oil
- Analgesic Effects: When diluted, mustard oil can be rubbed on the skin for possible analgesic effects on muscular and joint-related pains (with caution).
- Cooking: In certain areas, mustard oil is used for cooking (with much concern and moderation).
Benefits of Mustard Oil
- Pain Relief: Mustard oil may help relieve some pain when applied to the skin (with some restrictions).
- Circulation: One study has indicated that mustard oil might have an effect on circulation, though more studies are needed to confirm this.
