Overview

As the name suggests, mustard oil is an oil obtained from mustard seeds of two varieties, namely Black mustard seeds (Brassica juncea) or Brown Indian mustard seeds (Brassica nigra). It has a very sharp pungent smell and a sharp, spicy taste. This oil has been employed in various cultures for food preparation and its preservative health benefits. Cold-developed or mechanically expelled, the oil concentrates the volatile contents within the seeds to create a strong mustard oil with a distinct taste.

Chemical Composition

The typical sharp smell and hot taste in mustard oil are primarily due to a substance named allyl isothiocyanate (AITC). While AITC contributes to the pungent taste, it also has positive health attributes. Other nutritional components of the oil include linoleic acid and oleic acid.
